Like a summer sunset in a cup, this drink combines a sweet Fruitalicious jelly with a sparkling, fruity finish for a boba-like experience you can easily make at home
Ingredients
For the Fruitalicious jelly (makes 500ml):
- 25g Fruitalicious
- 100g sugar
- 500ml water
- 4 gelatine leaves
For the drink:
- 2 tbsp Fruitalicious jelly
- 7g Fruitalicious tea
- 80ml water
- Sparkling water or lemonade
- Fruit to garnish – we like dragonfruit but strawberries are just as good!
- Ice

- Infuser
- 2 bowls
- Square based heatproof dish
- Tall glass
Start by making the jelly:

Brew 25g Fruitalicious in a bowl using an infuser, in 500ml boiling water.

Meanwhile, soak the gelatine sheets in a separate bowl with cold water for 5-7 minutes or according to the packet instructions.

Once the tea has brewed for around 7 minutes, stir in the 100g sugar until dissolved.

Squeeze out the excess water from the gelatine sheets and add these to the hot tea mixture and stir until the gelatine and sugar are completely dissolved.

Pour this into a square based heatproof dish and refrigerate until set.
Assemble the drink:

Brew 7g Fruitalicious in 80ml boiled water for 5 minutes.

Fill a tall glass to ¾ full with ice and top with 2 tbsp of the Fruitalicious jelly.

Pour over the brewed tea and top with either sparkling water or lemonade, depending on your sweetness preference.
