  • If you're short on time or don't have any strawberries at home, skip part one and use strawberry jam instead of the syrup. This is will be bit sweeter than our syrup recipe, but equally delicious.
  • “When shopping for strawberries, go for your juiciest and softest option. These will look bright red, and almost too soft to eat – but trust us, they are perfect for this recipe. These will give you the sweetest tasting latte. If strawberries are not in season, try substituting with frozen strawberries.​”
  • The strawberry syrup keeps refrigerated for 3-4 days or freezes well for 3 months (tip: freeze in an ice cube tray for easy portioned defrosting later).
  • Use a ceremonial-grade matcha, like the T2 Certified Organic Matcha Powder, and your iced latte will be a bright green with a fresh, non-bitter taste.
  • For an extra special and creamy finish, foam your milk.

Serves 1 people
Ingredients
Strawberry syrup
  • 450 g fresh stawberries, hulled and cut into halves or quarters
  • 60 ml sugar or maple syrup
  • 60 ml water
  • 2 tbsp fresh lemon juice
Iced Matcha
  • 1-2 tsp T2 100% Certified Organic Matcha Powder
  • 60 ml 80°C water
  • Ice cubes
  • 250 ml oat milk or other milk of choice

Tools
  • Medium pot
  • Stick blender or muddler
  • Matcha bowl
  • Matcha whisk

Part One: making the strawberry syrup

    Add all strawberry syrup ingredients into a medium pot and bring to a simmer over medium-high heat. Simmer until strawberries are softened, about 3-4 minutes. Taste and add more sweetener if needed.

    Use a muddler or stick blender to puree the syrup to your desired consistency – leave some chunks or blend until smooth.

    Once cooled, it's ready to add in your iced matcha latte. Recipe makes syrup for 4 lattes.

Part two: making iced strawberry matcha latte

    Add matcha powder and 80°C water to a matcha bowl.

    In a tall glass, add 2-3 tbsp of strawberry syrup or jam.

    Add ice cubes and milk until nearly full, then top with the matcha.

    Serve, and admire all the vibrant colours. Then stir it up and enjoy!
