  • Pot sieve shaker (can use a sealable jar or protein shaker)
  • Tumbler
  • Rolling Pin


  • Papaya Lime tisane
  • 50ml Clean Liquor Co Clean Rum
  • 400g caster sugar
  • 300g raspberries
  • 1 lime
  • 30ml lime juice
  • 40ml White Peach juice
  • 6 mint leaves
  • Dark chocolate shavings and pineapple garnish


  1. Brew a cup of Papaya Lime (2 teaspoons in 200ml 100°c for 3-5 minutes)
  2. Strain out the leaves and combine the tisane with 400g caster sugar, 300g raspberries, the lime zest and half of its juice
  3. Simmer for 20 minutes, leave to infuse overnight then strain in the morning
  4. Add the mint leaves to the bottom of a shaker and then combine all the liquids
  5. Lightly muddle the mint then leave this for 5 minutes
  6. Remove the mint, fill the shaker with ice and then shake vigorously
  7. Strain the liquid into a tumbler and fill with crushed ice
  8. Grate some dark chocolate over the top and slot in some pineapple leaves
