This chocolatey chai loaf is decadently sweet from the dates with a delicate spiced edge. Serve warm at afternoon tea, or whenever a little sweet treat calls!

You’ll need

  • 4 teaspoons Choc Chip Chai
  • 250 ml/8.4 fl oz boiling water
  • 380 g/13 oz pitted dates, chopped
  • 1 teaspoon bicarb soda
  • 135 g/4.7 oz brown sugar
  • 150g/5 oz melted and cooled unsalted butter
  • 4 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon finely grated orange zest
  • ½ teaspoon ground cinnamon
  • 245 g/8.6 oz self-raising flour
  • 190 g/6 oz chocolate chips

How to

  1. Preheat the oven to 170°C/330°F. Grease and line a loaf tin with baking paper.
  2. Combine the Choc Chip Chai with the boiling water and infuse for three minutes, then strain the liquid. In a small heatproof bowl, combine the chai with dates and bicarb soda. Leave to stand for 10 minutes then blend until smooth in a food processor.
  3. Place the brown sugar, butter, eggs, vanilla, zest and cinnamon in the bowl of an electric mixer and beat until smooth.
  4. Sift the flour into the mixture and mix by hand until just combined. Stir through the date mixture and chocolate chips and spoon into the loaf tin.
  5. Bake for 40-50 minutes or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes before transferring to a wire rack.
  6. Serve warm with freshly brewed T2 Chai (check out our chai how to brew page!).
