  • 2 cups of pouring cream
  • 1/2 cup of milk
  • 1.5 tbsp of powder gelatin
  • 1 tbsp of caster sugar
  • 2 tbsp of T2 jam on toast tea leaves in a pot for brewing
  • 1 cup of frozen mixed berries
  • 1 tsp of icing sugar


  1. Place cream in a saucepan on medium heat till it boils. Lower the flame and add milk, stirring to combine. Place the gelatine in a separate bowl add a splash of the milk and cream mixture and whisk vigorously till there are no lumps and a paste forms. Place back into the pot along with the caster sugar and whisk to combine and sugar has dissolved
  2. Add the T2 jam on toast leaves into the strainer of the pot and pour the milk mixture carefully in letting it brew for five minutes. Swirl your pot to allow flavours to mingle and pour the mixture close to the bottom of a thermal glass cup to avoid bubbles
  3. Cool completely (to avoid condensation and bubble marks on the panna cotta) before placing cling wrap and leave in the fridge overnight
  4. Simmer mixed berries with icing sugar and stir for 5-10 minutes. Remove and spoon a little bit at a time into the glass to avoid the mixture going everywhere. Start from the centre and move berries out to cover the surface
  5. Enjoy!
