You’ll need

  • 7 teaspoons Earl Grey
  • 260 g/9.2 oz oats
  • 170 g/6 oz pecans, roughly chopped
  • 170 g/6 oz almonds, roughly chopped
  • 170 g/6 oz macadamias, roughly chopped
  • 45 g/1.6 oz shredded coconut
  • 80 ml/2.7 fl oz coconut oil
  • 80 ml/2.7 fl oz maple syrup
  • A pinch of sea salt

How to

  1. Preheat oven to 160°C/325°F. Line a large baking tray with baking paper.
  2. Grind Earl Grey in a mortar and pestle or spice grinder until fine.
  3. Gently melt coconut oil and maple syrup in a small saucepan.
  4. In a large mixing bowl add oats, pecans, almonds, macadamias, shredded coconut, ground Earl Grey and salt. Mix well.
  5. Pour wet mixture over dry ingredients and mix thoroughly with your hands, ensuring all dry ingredients are covered.
  6. Transfer mixture to a baking tray and flatten.
  7. Place in the oven, and cook for approximately 20 minutes. Halfway through cooking time, remove from the oven and stir before flattening and returning to oven. Repeat if necessary.
  8. Once cooked, remove from the oven and leave to cool, then transfer to a large clean jar.
  9. Serve with thick yogurt and fruit, on top of smoothie bowls or with almond milk and fresh raspberries.
