  • 3 cups plain flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch Salt
  • 1 & 1/2 cups caster sugar
  • 1.5 TBS T2 Matcha Powder (or more if you like a strong flavour)
  • 2/3 cup light tasting vegetable oil
  • 2 cups plant milk
  • 2 tsp vanilla essence
  • 2 TBS apple cider vinegar

  1. Preheat your oven to 175 degrees and grease a non-stick 20-22cm Bundt pan lightly with oil
  2. Sift your flour and mix all your dry ingredients in a large bowl until combined. Combine your wet ingredients in a separate bowl and add to your dry ingredients
  3. Whisk well until the mixture is smooth and free of lumps. Transfer the batter into your bundt tin, level the batter by tapping it gently on the bench and transfer to your oven to cook for 60 minutes or until a skewer inserted into the centre comes out clean
  4. Carefully remove from the oven, allow to cool for 10 minutes before carefully flipping onto a wire rack to cool. Once the cake has cooled, melt chocolate in 30 second intervals in the microwave until runny, and glaze over the top of your cake. Topp with crush nuts and a light matcha dusting
