  • 350g of white chocolate buttons
  • 1/4 cup raw pistachios
  • 1 tbsp pepitas
  • 1/4 cup dried cranberries
  • 1/4 cup dried apricots, chopped
  • 1 tbsp coconut flakes
  • 1/2 tbsp of T2 matcha powder
  • 2 tbsp extra virgin olive oil


  1. Grab a standard flat baking tray and line with baking paper
  2. Prep all the toppings (pistachios, pepitas, cranberries, apricots, coconut flakes) so you’re ready, as the chocolate will set quick smart once it’s poured onto the tray
  3. In a microwave proof bowl melt the white chocolate in 30 second increments stirring at each break. This may take up to 2 mins in total. Around the 1.5 min mark, pour in the olive oil and stir until combined. Continue the 30-second increments until your chocolate is melted
  4. Pour half the white chocolate on the tray and spread thinly with the back of a spoon until the desired thickness you're after (we aim for about 3-4mm thick)
  5. Stir in the T2 matcha powder to the remaining melted white chocolate in the bowl and once completely combined pour over the top of the white chocolate on the tray (to create that top deck look). Use the back of your spoon to smooth the Matcha white chocolate out over the top of the existing white chocolate
  6. Decorate to your hearts content with the toppings and then leave the bark to set (quickest and easiest way is in the fridge)
  7. Cut into triangles to show that top deck goodness and serve with your favourite pot of T2 tea!
