Gooey Sticky Date Pudding with Chai Caramel Sauce
Attention Sippers! To celebrate our deliciously fine and oh-so nifty Happy Chai Super Latte, we have taken the versatility of this brew to the next level with an oozy, gooey and decadent sticky date pudding with caramel sauce. Positively overflowing with the indulgently rich taste of chewy dates and chai spiced caramel, this drool-worthy recipe is simply sublime and packed full of fibre too — win, win!

Serves 4 people
Ingredients
Pudding
- 1 cup pitted dried dates
- ½ tsp bicarbonate of soda
- 1 cup boiling water
- ⅓ cup maple syrup
- ⅓ cup olive oil
- 1 tsp vanilla essence
- 1 ½ cups wholemeal plain flour
- 1 tsp baking powder
- 1 tsp mixed spice
- ¾ cup of walnuts
- 1 egg
Caramel Sauce
- ½ can coconut milk
- ½ cup maple syrup
- 1 sachet of T2 Happy Chai Super Latte
Method
To make the pudding

1Preheat oven to 180 degrees Celsius.

2Grease a round glass baking dish.

3Place the dates and bicarbonate of soda in a medium heatproof bowl then pour over the boiling water.

4Stir the date mixture and set aside, stirring occasional for 10mins to ensure the dates soften up!

5Add the maple syrup, olive oil, vanilla essence and egg to the date mixture, stir to combine.

6Whisk together the flour, baking powder, mixed spice and walnuts in a large bowl, then add the date mixture to the flour mixture, stir to combine well.

7Pour into the prepared dish.

8Bake for 20-25 minutes or until the centre comes out dry from testing with a knife.
To make the caramel sauce

1While the pudding is baking in the oven, combine the coconut milk, maple syrup and T2 happy Chai Super Latte to a small saucepan on a low-medium heat.

2Whisk to combine and continue whisking to reduce the mixture to a sticky consistency.

3This will take about 10 mins!
