Matcha has found a comfortable home in New Zealand. Walk into almost any specialty café in Auckland, Wellington, or Christchurch and you'll find a matcha latte on the menu. For many Kiwis, that's been the introduction. But the matcha in your café cup and the matcha prepared at home with the right tools are quite different experiences, and once you've made it properly, it's hard to go back to anything else.
New Zealand's growing interest in mindful living, wellness rituals, and quality food culture makes it a natural fit for traditional matcha preparation. The ceremony is slow and deliberate by design, a genuine counterweight to a fast-paced day. Why matcha needs its own tools
Matcha is not loose leaf tea. It is finely ground green tea powder, shade grown for the last 21 days before harvest to concentrate its flavour and deepen its vivid colour. Because you're drinking the whole leaf ground into suspension rather than steeping and straining it, the way you prepare it matters enormously.
You can't steep matcha in a pot and pour it into a cup. It needs to be whisked. The powder needs to be fully suspended in the water to avoid clumps, and that suspension is what creates the characteristic silky texture and the fine layer of foam on the surface. Without the right tools, you end up with a gritty, uneven cup that doesn't do justice to the tea.
The two non-negotiables are a bowl and a whisk.
The chawan: why the bowl matters
The chawan (meaning "tea bowl") is the vessel at the heart of the Japanese tea ceremony. Its proportions are not incidental. The wide, open base gives your wrist room to whisk freely. The gently sloped sides keep the tea contained without trapping powder in corners. The depth holds heat in the bowl and warmth in your hands.
Cradling a chawan while you drink is part of the experience. You hold it with both hands, turning it slightly as a quiet gesture of respect. It is an intentional act rather than an automatic one.

The chashaku: getting your measure right
The chashaku is the bamboo scoop used to measure matcha powder into the bowl. It looks simple, but its shape is deliberate. The gentle curve and narrow profile are designed to gather exactly the right amount of matcha for one bowl, around one to two grams, without compressing the powder or creating waste.
You could use a kitchen teaspoon in a pinch, but the chashaku is part of setting the intention for the ritual. Having the right tool in your hand changes how you approach the preparation. It slows you down in a good way.
The whisk holder: caring for your chasen
The kusenaoshi, or whisk holder, is the small raised stand your chasen rests on when it's not in use. After you rinse your chasen, placing it tines-down onto the whisk holder allows it to dry in its natural curved shape rather than flattening out over time. A well-cared-for chasen will last for months of daily use. Without a holder, the tines lose their shape and the whisk becomes less effective.

How to make matcha at home
The full process takes about five minutes once you have everything ready.
Warm your bowl with hot water, then empty and dry it. Add one to two scoops of matcha powder using your chashaku. Pour around 100ml of water at 80 degrees Celsius, not boiling. Whisk in a "W" motion with your chasen until a fine, even foam forms across the surface. Lift the whisk gently at the end to finish. Cradle the bowl in both hands and drink.
