Brown Sugar Matcha Cookies
Chewy, more-ish brown sugar matcha cookies with warm caramel notes, umami-rich matcha, and a delicate sprinkle of sea salt.
Ingredients
- 115g unsalted butter, melted and cooled
- 120g soft brown sugar
- 1 egg yolk
- 2 tsp T2 Brown Sugar Matcha
- ½ tsp vanilla extract
- 150 g plain flour
- ½ tsp baking soda
- ¼ tsp salt
- Sea salt flakes

Whisk melted butter and brown sugar until glossy and smooth.

Mix in egg yolk, vanilla, and T2 Brown Sugar Matcha until evenly combined.

In a separate bowl, whisk flour, baking soda, and salt.

Fold dry ingredients into the wet mixture just until a soft dough forms.

Chill dough for 30 minutes.

Scoop into balls and place on a lined tray. Sprinkle lightly with sea salt flakes and bake at 170°C for 12 minutes.
