Vegan Strawberry & Chocolate Cheesecake
Sippers, you can now have your (cheese)cake and eat it too! Simply slurping our Strawberry Sleep Super Latte wasn’t quite enough. So, we decided to make an edible version of it, too. Put your hands together for: Vegan Strawberry & Chocolate Cheesecake. Creamy, rich and luscious, the traditional flavour pairing of fruity strawberry and smooth chocolate are classics for a reason — and this recipe is a sweet reminder why.

Serves 2 people
Ingredients
Cake base
- ¾ cup almond meal
- ⅓ cup cacao powder
- 2 tbs coconut oil
- 2 tbs maple syrup
Cheesecake
- ½ cup coconut yoghurt
- 2 tbs coconut oil
- 1 tbs maple syrup
- 1 sachet Strawberry Sleep Super Latte
Chocolate top
- 50g dark chocolate
- 1 tsp coconut oil
Method

1Add base ingredients to a bowl and stir to combine and form a thick dough.

2Press dough into a small cake tin and set aside in the fridge.

3Make the cheesecake layer by stirring ingredients together until smooth. Pour over base and put in the freezer to set.

4Once set melt dark chocolate with coconut oil and pour on top. Put in back in the freezer to set before slicing.
Store cheesecake in the freezer and refrigerate for around 30 minutes to soften before serving.
